Applesauce Cake


I was first introduced to applesauce cake when my daughter's preschool teachers baked some with the kids a few years ago. A simple and moist cake, I simply fell in love with the taste and texture and my otherwise super picky daughter finished up a full slice of the cake (this never happens).

After our recent apple picking excursion, we came back with so many Prime Red apples that even after giving away more than a couple dozen apples, we were still sitting with so many more. Of course, this was the perfect opportunity to make the applesauce cake. I used fresh homemade apple sauce for this recipe, but you could also use store bought apple sauce.

And, I was on a time pinch, so I simply added all the ingredients into a bowl, gave it a good mix and then baked it. Couldn't get any easier.

Apple season is here, so go ahead and try this simple cake out. You won't regret it.

Ingredients:

1/2 cup butter

1 cup sugar

2 eggs, beaten

1 1/2 cups apple sauce, unsweetened

2 cups flour, sifted

1/4 tsp salt

1 tsp baking soda

1 tsp cinnamon

1 apple thinly sliced (optional)

Directions:

Preheat oven to 350 degrees F.

Grease and lightly flour an 9 inch springform pan.

Add all the ingredients into a large bowl and beat for about 2 to 3 minutes or until the batter is thick and creamy, .

Transfer the batter into the greased pan.

Arrange the slices of apple on the top.

Bake in the oven for about 45 minutes or until an inserted toothpick comes out clean.

Let it cool and then open hinge of pan to release the sides. Serve at room temperature, or can also be served warm with a dollop of vanilla ice-cream on the side. :-)
