Applesauce Olive Oil Loaf

So this is all a trickle effect of going apple picking. We went apple picking and as always, picked way too many apples. We ate some, made pies, crumbles and tarts with some, and then they were starting to over ripen. Which is when I took the rest and made my Slow Cooker Applesauce. Well, now that I have all this applesauce, I've got to figure out what to do with it. :-)

This Applesauce Olive Oil loaf is just awesome. I made two loaves today and my piano teacher had a taste and loved it so much that I gave her one of the loaves. Now I'm thinking I'll just make a bunch of these loaves and gift them to my neighbors. This way everyone is happy!!!

I added cranberries and chocolate chips to the loaves for fun, but next time I'm going to leave them as they are - super moist and delicious. I almost felt like the cranberries and chocolate chips took away from the deliciousness a little bit. So the recipe below is just for the plain loaf without any added toppings or fillers.

Serving Size - 1 standard loaf (6-8 servings)

Time: 20 minutes (prep), 1 hr (baking), Total - 1 hour 20 minutes

Ingredients:

3/4 cups Sugar

2 large Eggs

1 cup Olive Oil

1 1/2 cups Applesauce (unsweetened)

1 1/2 cups all-purpose Flour

1/2 teaspoon Baking Soda

1 teaspoon Baking Powder

1/2 teaspoon Salt

1/2 teaspoon Ground Cinnamon

1/4 cup rolled oats

Directions:

1. Preheat oven to 350 degrees F. Lightly grease (with olive oil) a standard loaf pan and set aside.

2. In a large bowl add the Sugar and Eggs and beat for about 2 minutes or until creamy.

3. Mix in the Olive Oil and Apple sauce.

4. Then add in the dry ingredients - Flour, Baking Soda, Baking Powder, Salt, Cinnamon and Rolled Oats and beat until combined.

5. Transfer batter to the greased pan and bake for about 1 hour or until an inserted toothpick comes out clean.

6. Let it cool slightly, and then slice and enjoy.
