15 minute French Green Bean and Corn Stir fry


This is a great side dish with any protein - fish, chicken or meat. I use Panch Phoran, or the Indian 5 Spice mix, which by the way is a must have for your pantry. This mix of 5 seeds - Cumin, Nigella, Fennel, Fenugreek and Black Mustard is such a phenomenal combination of flavors and makes any dish spectacular. These are also used as pickling spices in India.

And you can play around with different combinations of vegetables as well. I have used it with beets, spinach and corn, Kale, sweet potato and green beans, potatoes and mixed greens, and the list goes on.

I use a fresh Indian green chili to add heat, but without that you still have a delightfully flavorful dish minus the heat.

Serves - 2 to 4

Time - 15-20 minutes (total)

Ingredients

2 tbs oil

1 tsp Phanch Phoran (Indian 5 spice)

1 green chili (optional)

Salt to taste

1 small onion, chopped

1 1/2 cups chopped Green Beans

1 12 cups frozen or fresh corn

Directions:

- Heat a medium sized pan with the oil. Keep the heat at medium/high.

- Add in the Panch Phoran seeds and green chili and wait until it starts spluttering.

- Mix in the onions and cook for about 7 minutes or until soft and brownish.

- Add in the beans and corn and mix well.

-Cover and cook for another 7-10 minutes or until done.
