Spicy Kerala Shrimp Curry
Ever since my friend, Abinash John, posted a picture of a Kerala style spicy shrimp curry on his Instagram profile a few months ago, I couldn't get it out of my mind. It looked so good that I could almost taste it. He gave me the recipe and I finally decided to try it out. Most of the spices used are ones that I use regularly and am familiar with. However, this was my first time using the spice "Kokum." It is used to add tartness to a dish, sometimes as a substitute for ta

Broiled Nectarine with Mango Puree Sauce
This is a simple, refreshing and delicious treat for the summer. Directions - Cut a nectarine into pieces and broil in the oven on high for a few minutes, until the skin is lightly charred and the flesh is soft enough. Transfer to a serving bowl and top with a mango puree sauce, made by pureeing pulp of a mango with a little sugar or honey (per your taste) and a splash of lemon juice. #Fruit #Dessert #Fruitdessert #Summer

Pomegranate Tofu Bites
We traveled to Portugal a couple of years ago, and it might have been one of the best vacations we ever had. Beautiful country, friendly people and delicious food. We started our journey in Lisbon, a fantastic city - vibrant and clean. After that we drove South to the Algarve region. The drive was absolutely beautiful as we passed vineyards and farms. The Algarve region was our favorite. I was excited to even have seen some Indian foods on the menu, Because of Portugal

Indian Spiced Crab Cakes
If you love crab cakes then you will devour these crab cakes packed with flavors and textures that you just can't go wrong with. They are so flavorful that you don't even need to dip them in any sauces or chutney. Just eat them as is. I have made these for special occasions and friends and family have loved it so much. I like making them bite sized sometimes as it makes a great appetizer. And, I would recommend using lump crabmeat. It is expensive but worth every penny. R

Sweet Zinfandel Infused Strawberries with Whipped Mascarpone
And this is it!! One of my favorite summer fruity desserts. I've slightly tweaked the original recipe by Lynee Rossetto Kasper. So easy to make and a sure winner. For my kids I infused the strawberries in pink lemonade instead of Zinfandel. RECIPE Servings - About 4 Time - 2 hours (Strawberries infusing with wine) 5 minutes (whipping the Mascarpone) 10 minutes (Putting it together) Total - 2 hours 15 minutes Ingredients 1/2 lb Strawberries (hulled and halved) 1/3 cup Zinfand

Chicken Tikka Masala - Just the way you like it...
I have forever been in search of the perfect Chicken Tikka Masala recipe. When I say "perfect" I mean succulent and moist pieces of chicken in a fingerlickious good sauce. The sauce is creamy, a little sour, a little sweet, and the chicken pieces are so perfectly tender and succulent. While there are all kinds of theories on where this great dish originated, one of the claims is that it originated in an Indian restaurant in the United Kingdom. In fact, it is also considered a

15 minute French Green Bean and Corn Stir fry
This is a great side dish with any protein - fish, chicken or meat. I use Panch Phoran, or the Indian 5 Spice mix, which by the way is a must have for your pantry. This mix of 5 seeds - Cumin, Nigella, Fennel, Fenugreek and Black Mustard is such a phenomenal combination of flavors and makes any dish spectacular. These are also used as pickling spices in India. And you can play around with different combinations of vegetables as well. I have used it with beets, spinach and

Easy Tandoori style Baked Salmon
Any Indian will vouch for the delicious flavors that go into Tandoori spiced dishes such as chicken, vegetables and seafood. The Tandoor is a traditional clay oven used to make meats, seafood and even the ever popular Indian Bread, Naan. Most people don't actually own Tandoors since it is an open oven and suitable only outdoors or in well ventilated restaurants. However, the oven is a pretty good substitute for everyday cooking. While Tandoori chicken is probably the most

Tart Cherry and Blueberry Pie
We decided to go cherry picking on July 4, and of course, it turned out to be the hottest day ever. My daughter could barely handle the heat, and sat in the shady seating area much of the time while my husband kept her company. Meanwhile, my son and I braved the heat and I'm glad we did. We picked out some amazing tart cherries. They were so beautifully deep red and juicy and oh so tart!! The farm also had blueberries, so I got a bunch because, hello....Blueberry is blue
