Hot Turmeric and Cinnamon Mixed Grain Porridge with fresh Berries

It's time to make a real change in my lifestyle, diet and attitude. As of May 1, I am on a diet that excludes any added processed sugars, white rice and white flours, red meat, high fat dairy (only dairy I will consume is fat free plain yogurt) and any fried and processed foods.

I will eat plenty of fruits, vegetables, some fish, egg whites, chicken, beans and legumes, lentils and healthy grains. The key to making this a true lifestyle change versus just another short lived diet is to keep the flavors going, adding variety, playing with colors and textures and enjoying the process of it all.

For breakfast, I want to play around with different variations of porridge. I love the traditional oatmeal, but I also enjoy variety. This particular porridge is so wholesome and nutritious and it can be eaten with fruits or add a pinch of salt and eat it as a savory dish.

Recipe:

Serves - 1 to 2

Time - About 30 minutes.

Ingredients:

1/2 cup of mix grains including quinoa, millet, buckwheat and oats

About 5-6 cups of water

1/2 cup Oat milk

1/4 teaspoon Turmeric

1/2 teaspoon Ground Cinnamon

1/2 cup of mixed berries

Directions:

1. Add the mixed grains, turmeric and cinnamon to a medium pot. Add the water and turn on heat to medium high. Stir well and bring to boil. Then turn down heat to low, cover and let it cook for about 20 minutes. Check and stir occasionally. Add additional water if needed.

2. After the 20 minutes, add the Oat Milk and cover and cook for another 5 minutes. If the consistency is too thick feel free to add additional oat milk or water. If it is too thin, then continue to cook until desired consistency is reached.

3. Transfer to a bowl, top with berries and enjoy.
