Sweet Zinfandel Infused Strawberries with Whipped Mascarpone
And this is it!! One of my favorite summer fruity desserts. I've slightly tweaked the original recipe by Lynee Rossetto Kasper. So easy to make and a sure winner. For my kids I infused the strawberries in pink lemonade instead of Zinfandel.
Servings - About 4
2 hours (Strawberries infusing with wine)
5 minutes (whipping the Mascarpone)
10 minutes (Putting it together)
Total - 2 hours 15 minutes
1/2 lb Strawberries (hulled and halved)
1/3 cup Zinfandel or any sweet wine
8 oz tub Mascarpone
2-3 tablespoons powdered Sugar
Place strawberries in a bowl and pour Zinfandel over them. Cover and refrigerate for 2-3 hours.
In a separate bowl whip together Mascarpone and sugar.
Place some whipped Mascarpone in a wine glass or any dessert cup. Then add some infused strawberries over it. Add another dollop of Mascarpone and end with a top layer of strawberries.
Spoon a little of the wine from the bowl into the sides of the glass.
Repeat with the rest of the berries and Mascarpone.
